Whip up a delectable tomato feta soup, rich and creamy, perfect with crusty bread.
Ingredients:
  • 2 tablespoons olive oil
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 1 (28 ounce) can San Marzano Peeled Tomatoes
  • 2 cups vegetable broth
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon white sugar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 3/4 cup crumbled feta cheese, divided
  • 1/3 cup heavy whipping cream
Instructions:
  • In a large saucepan over medium heat, sauté onions in olive oil until soft and translucent, for about 3 minutes. Add garlic and cook until fragrant, for 30 seconds to 1 minute.
  • Combine the tomatoes and their juices, vegetable broth, balsamic vinegar, sugar, basil, and oregano in a pot and stir to mix. Simmer for 7 minutes, then use an immersion blender or regular blender to puree the soup until smooth. Season with salt and pepper to taste.
  • Mix in 1/2 cup of tangy feta cheese and let it simmer for approximately 10 minutes. Pour in the whipping cream and stir until smooth. Taste and adjust seasoning, if needed. Serve piping hot, topped with the rest of the feta cheese for a beautiful finish.
