Creamy tomato soup elevated with Gorgonzola and cream.
Ingredients:
  • 0.25 large red onion, diced
  • 0.5 cup red bell pepper, diced
  • 2 cloves cloves garlic, minced
  • 0.25 cup Gorgonzola cheese, crumbled
  • 4 ounces cream cheese, softened
  • 0.25 cup heavy cream
  • 0.25 cup milk
  • 1 (14.5 ounce) can diced tomatoes
  • 1.5 cups tomato juice
  • 2 teaspoons dried basil
  • 1 teaspoon white sugar
  • 0.25 teaspoon ground white pepper
Instructions:
  • In a medium saucepan over medium heat, sauté onion, pepper, and garlic in oil for 4 to 5 minutes until vegetables are soft.
  • Combine the cheeses, cream, and milk in a saucepan and heat until the cheeses are melted and the mixture is simmering.
  • Gently fold in the tomatoes with their juices, tomato juice, fresh basil, sugar, and pepper. Let the mixture simmer for 15-20 minutes, stirring continuously. Be careful not to let it come to a boil.
