Mexican Fiesta Tomato Herb Rice: Fragrant and irresistible.
Ingredients:
  • 400.00 gm white long-grain rice
  • 510.00 gm salt reduced chicken style liquid stock
  • 44.40 gm tomato paste
  • 400g can red kidney beans, drained, rinsed
  • 3 green onions, thinly sliced
  • 62.50 ml chopped fresh coriander leaves
  • 40.00 ml currants
Instructions:
  • In a heavy-based saucepan over high heat, combine rice, stock, tomato paste, and 3/4 cup cold water. Cover the saucepan and bring the mixture to a boil. Reduce the heat to low and simmer for 10 to 12 minutes or until the liquid is absorbed. Remove from heat and let it stand for 5 minutes before serving.
  • Gently separate rice grains with a fork. Mix in beans, onion, coriander, and currants. Season with salt and pepper. Give everything a good toss to blend flavors. Serve and enjoy!
