Tomato salad with roasted garlic and balsamic dressing

Brighten up your meal with a vibrant tomato salad side dish.
Ingredients:
  • 4 garlic cloves, unpeeled
  • 20.00 ml balsamic vinegar
  • 2 x 400g punnets tomato medley mix
  • 4 medium tomatoes
  • 125.00 ml fresh basil leaves
  • 40.00 ml pine nuts, toasted
Instructions:
  • 1. Preheat your oven to 200C/180C fan-forced. Place garlic cloves on a 20cm piece of foil. Drizzle with 1 teaspoon of oil. Seal the foil tightly. Roast for 15 to 20 minutes until soft. Allow to cool for 5 minutes before handling.
  • Separate garlic cloves from their skins. Transfer garlic to a bowl and mash it with a fork until smooth. Mix in balsamic vinegar and the rest of the oil. Season the mixture with salt and pepper to taste.
  • Cut large tomatoes into quarters and medium and small tomatoes in halves. Place the tomatoes in a glass or ceramic bowl and drizzle with dressing. Let the flavors develop by setting aside at room temperature for 30 minutes.
  • Present the tomato mixture on a platter and generously sprinkle with fresh basil leaves and pine nuts before serving.
