Tomato soup

Create a delicious homemade tomato soup with this easy and timeless recipe.
Ingredients:
  • 2 carrots
  • 2 sticks of celery
  • 2 medium onions
  • 2 cloves of garlic
  • olive oil
  • 2 organic reduced-salt chicken or vegetable stock cubes
  • 2 x 400 g tins of quality plum tomatoes
  • 6 large ripe tomatoes
  • ½ a bunch of fresh basil (15g)
Instructions:
  • Peel and roughly chop the carrots, celery, onions, and garlic. Heat 2 tablespoons of oil in a large pan over medium heat. Add all the chopped vegetables and cook with the lid slightly ajar for 10 to 15 minutes until softened. Dissolve the crumbled stock cubes in 1.5 litres of boiling water. Pour the stock into the pan with the tomatoes (including the green stalks for extra flavor). Bring to a boil, then simmer for 10 minutes with the lid on. While simmering, pick the basil leaves. Remove the pan from the heat, season with salt and pepper, then stir in the basil leaves. Blend the soup until smooth, adjust the seasoning if needed, and serve.
