Indulge in a flavorful brunch bake with layers of cheese, tomatoes, and Original Bisquick® mix.
Ingredients:
  • 2 1/2 cups Original Bisquick™ mix
  • 1/2 cup grated Parmesan cheese
  • 3/4 cup milk
  • 2 cups shredded mozzarella cheese (8 oz)
  • 3 large tomatoes, cut into thin slices
  • 1/2 cup refrigerated basil pesto
  • 1/2 cup whipping cream
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 4 eggs
Instructions:
  • Preheat oven to 350°F. Combine Bisquick mix, Parmesan cheese, and milk in a medium bowl until a soft dough forms. Press dough into the bottom and 1/2 inch up the sides of an ungreased 13x9-inch (3-quart) baking dish using fingers dipped in Bisquick mix.
  • Begin by generously sprinkling 1 1/2 cups of mozzarella cheese over the crust. Arrange the tomatoes on top of the cheese, making sure to overlap if needed. Next, evenly spread the pesto over the tomatoes. In a medium bowl, whisk together the whipping cream, salt, pepper, and eggs until well combined. Carefully pour this mixture over the tomatoes. Finish by sprinkling the remaining mozzarella cheese on top.
  • Bake until the top turns a beautiful golden brown color. Allow it to rest for 5 minutes before enjoying.
