Quick and delicious no-bake blueberry pie with a pre-baked crust, ideal for summer.
Ingredients:
  • 0.75 cup white sugar
  • 3 tablespoons cornstarch
  • 1 pinch salt
  • 1 cup water
  • 4 cups fresh blueberries, divided
  • 1 (9 inch) pie crust, baked
Instructions:
  • In a saucepan, mix sugar, cornstarch, and salt. Add water and 1 cup of blueberries. Cook over medium heat, stirring occasionally, until thickened, about 8 to 10 minutes.
  • Take the mixture off the heat, swirl in butter, and allow it to cool for 5 minutes before gently folding in the remaining 3 cups of blueberries.
  • Spread a generous amount of fresh blueberries into the golden, flaky pie crust. Allow the pie to chill in the fridge for 2 to 4 hours to enhance the flavors before enjoying.
