Tori's Air Fryer Pumpkin Bagels

Air-fried pumpkin bagels with Greek yogurt dough, topped with cheese.
Ingredients:
  • 1 cup all-purpose flour, or more as needed
  • 1 tablespoon brown sugar
  • 2 teaspoons baking powder
  • 0.5 cup pumpkin puree
  • 0.5 cup fat-free Greek yogurt (such as Fage®)
  • 0.25 cup quick oats
  • 1 tablespoon quick oats
  • 1 pinch ground cinnamon, or to taste
  • 1 egg white
  • 2 teaspoons honey
  • 1 teaspoon water
  • 0.25 cup mild shredded Cheddar cheese
Instructions:
  • Preheat your air fryer to 280 degrees F (140 degrees C) following the manufacturer's instructions for about 3 minutes. Line the air fryer basket with parchment paper and give it a quick spray of cooking spray.
  • Combine flour, brown sugar, baking powder, and salt in a medium bowl. Mix in pumpkin puree and yogurt until well blended.
  • On a lightly floured surface, shape the dough into 4 balls. Roll each ball into an 8-inch rope and form into bagels by joining the ends together.
  • In a small bowl, combine oats and cinnamon. In another bowl, whisk together the egg white, honey, and water until smooth. Brush the bagels with the egg mixture and sprinkle with the oats and cinnamon on both sides.
  • Arrange the bagels in the prepared basket and bake for 13 minutes. Then, generously sprinkle Cheddar cheese over them and continue baking for an additional 2 minutes.
