Scandinavian-style Torsk: Poached and broiled cod with butter, no need to defrost frozen cod.
Ingredients:
  • 6 cups water, or more as needed
  • 1 cup white sugar
  • 2 tablespoons salt
  • 6 (6 ounce) fillets cod
  • 1.5 cups butter, melted
  • 1 dash paprika
Instructions:
  • Preheat the broiler and lightly grease a cookie sheet.
  • Combine water, sugar, and salt in a large saucepan. Place fillets in the water mixture, ensuring they are fully submerged. Bring to a boil over medium-high heat and cook for 3 to 5 minutes.
  • Take the fillets out of the water and pat them dry using paper towels. Brush them with 6 tablespoons of melted butter and sprinkle with paprika.
  • Place the fillets under the broiler until they develop a rich golden brown color, approximately 8 to 10 minutes per inch of thickness. Drizzle with the remaining melted butter before serving.
