Decadent chocolate walnut cake from Capri, a Southern Italian classic.
Ingredients:
  • 3 eggs, separated
  • 1 (4 ounce) bar dark chocolate, chopped
  • 0.5 cup white sugar
  • 2 tablespoons white sugar
  • 0.5 cup butter
  • 1 tablespoon butter
  • 1 cup ground walnuts
  • 0.33333334326744 cup all-purpose flour
  • 1 tablespoon baking powder
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a 9-inch round cake pan by greasing and flouring it.
  • Whisk egg whites in a glass, metal, or ceramic bowl until they form stiff peaks.
  • Whisk the egg yolks gently in a separate bowl.
  • Melt chocolate in a double boiler, stirring often and scraping down the sides, until smooth, for about 5 minutes. Remove from heat.
  • In a large bowl, cream together 1/2 cup plus 2 tablespoons sugar and 1/2 cup plus 1 tablespoon butter until creamy using an electric mixer. Mix in egg yolks, melted chocolate, walnuts, flour, and baking powder until smooth. Gently fold in the whipped egg whites.
  • Transfer the batter into the greased cake pan.
  • Bake in the oven until a toothpick inserted in the center comes out clean, approximately 30 minutes. Allow it to cool completely before serving.
