Tortellini minestrone

Make a quick and easy soup with store-bought ingredients.
Ingredients:
  • 9.20 gm extra virgin olive oil
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 2 litres water, boiling
  • 2 tomatoes, seeded, diced
  • 180g packet minestrone soup
  • 375g packet fresh veal tortellini
  • 125.00 ml frozen peas
  • 62.50 ml parmesan, grated
  • Fresh flat-leaf parsley leaves, chopped, to serve
Instructions:
  • In a large saucepan over medium-high heat, heat oil. Add carrot and celery and cook, stirring occasionally, for 3 to 4 minutes until softened.
  • Pour boiling water into a pot and stir in tomato, soup mix, and stock sachet. Bring to a simmer, then reduce heat to medium, cover, and cook for 15 minutes. Stir in tortellini and peas during the last 3 minutes of cooking until tender. Season with salt and pepper to taste.
  • Garnish with a sprinkle of Parmesan cheese and fresh parsley before serving.
