Mouthwatering Italian anchovy bake with fragrant breadcrumbs, capers, garlic, and parsley layers.
Ingredients:
  • 1 pound fresh anchovies, rinsed
  • 2 cups white vinegar
  • 7 ounces dried bread crumbs
  • 2 tablespoons capers, minced
  • 2 tablespoons minced Italian parsley
  • 2 cloves garlic, minced
  • 2 tablespoons extra-virgin olive oil, or as needed
Instructions:
  • Prepare the anchovies by slicing open the bottom of each and removing the bone. Open them up like a book and lay them in a shallow dish. Drizzle white vinegar over the anchovies and let them marinate in the refrigerator for 2 hours. After marinating, drain off and discard the vinegar.
  • Preheat the oven to a cozy 325 degrees F (165 degrees C) while you gracefully brush a baking dish with a touch of olive oil.
  • Combine bread crumbs, capers, fresh parsley, and minced garlic in a bowl.
  • Spread a layer of the bread crumb mixture in the bottom of the baking dish. Place anchovies in a single layer, open like a book. Lightly brush with olive oil and sprinkle with bread crumb mixture. Repeat layers with remaining anchovies, olive oil, and bread crumb mixture.
  • Bake until the top is crispy and lightly browned, approximately 20 minutes in the preheated oven.
