Traditional Christmas gingerbread

Delicious gingerbread men that will have everyone running to devour them.
Ingredients:
  • 150g organic butter, unsalted, cubed
  • 125ml golden syrup
  • 110g brown sugar
  • 2.50 gm bicarbonate of soda
  • 450g plain flour
  • 10.00 gm ground ginger
  • 2.50 gm ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground cloves
  • 2.00 gm baking powder
  • 1 egg, lightly whisked
  • Writing fudge, to decorate
  • Rainbow choc chips, to decorate
Instructions:
  • Preheat your oven to 180°C and prepare 2 large oven trays with baking paper.
  • In a medium saucepan over medium heat, melt butter with golden syrup and sugar, stirring for about 3 minutes until sugar dissolves. Bring to a boil, then remove from heat. Stir in bicarbonate of soda and transfer to a large heatproof bowl. Let cool.
  • Sift flour, ginger, cinnamon, nutmeg, cloves, and baking powder over the butter mixture. Add the egg and mix until well combined. Transfer the dough onto a lightly floured surface and knead gently until smooth. Divide the dough into two equal parts, shape each into a disc, and wrap in plastic. Chill in the fridge for 45 minutes or until firm.
  • Roll one portion of dough between two sheets of baking paper until it's 5mm thick. Use a 6-7cm Christmas pastry cutter to cut shapes from the dough, re-roll any scraps. Place the cut shapes on lined trays, leaving 3cm of space between each to allow for spreading. Repeat the process with the remaining gingerbread portion.
  • Place one tray in a preheated oven and bake for 8 minutes until just firm to the touch. Set aside on the tray for 5 minutes to cool before transferring to a wire rack to cool completely. Decorate the gingerbread with writing fudge and rainbow chocolate chips, if desired.
