Indulge in a decadent steamed Christmas pudding bursting with fruity sweetness and a touch of brandy. Don't forget to save room for dessert! Transform any leftovers with our creative ideas, including a gluten-free version.
Ingredients:
  • Melted butter, to grease
  • 375g dried mixed fruit
  • 75g glace cherries, quartered
  • 75g dried figs, chopped
  • 75g dried pears, chopped
  • 75g Dried Cranberries
  • 75g pitted dried dates, chopped
  • 40.00 ml finely grated orange rind
  • 250ml orange juice
  • 80ml brandy
  • 150g plain flour
  • 150g self-raising flour
  • 2.50 gm bicarbonate of soda
  • 2.50 gm mixed spice
  • 2.50 gm ground nutmeg
  • 250g unsalted butter, melted, cooled
  • 220g brown sugar
  • 3 eggs, lightly whisked
  • Custard, ice-cream, or brandy butter, to serve
Instructions:
  • Grease an 8-cup (2-liter) pudding basin by brushing it with melted butter and lining the base with rounds of baking paper.
  • In a medium saucepan over medium heat, mix together the dried fruit, cherries, figs, pears, cranberries, dates, orange rind, and juice. Stir occasionally and cook for 10 minutes until the fruits soften. Let it cool for 30 minutes, then add brandy and stir well to combine.
  • In a large bowl, sift together the flours, bicarbonate of soda, cinnamon, mixed spice, and nutmeg. Add the fruit mixture, butter, brown sugar, and eggs. Stir everything together until well combined. Spoon the mixture into a pudding steamer, smoothing the top, and then secure the lid.
  • Place the pudding basin in a large saucepan filled halfway with boiling water. Bring to a boil over medium heat and cook covered for 5 and a half hours, adding more boiling water if needed, until a skewer comes out clean when inserted in the center of the pudding.
  • Take the steamer out of the saucepan and let it sit for 10 minutes before unmolding onto a serving plate. Enjoy immediately with custard, ice cream, or brandy butter, if preferred.
