Indulge in a sweet and delectable tres leches cake - a moist sponge cake soaked in three milks and topped with fluffy whipped cream.
Ingredients:
  • cooking spray with flour
  • 1 cup white sugar, divided
  • 5 large eggs, separated, divided
  • 1 cup all-purpose flour
  • 0.33333334326744 cup milk
  • 1.5 teaspoons baking powder
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 fluid ounce) can evaporated milk
  • 1 pint heavy whipping cream, divided
  • 10 maraschino cherries
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C, then generously spray a 9-inch springform pan with floured cooking spray.
  • In a mixing bowl, use an electric mixer to beat together 3/4 cup sugar and egg yolks until light, doubled in volume. Add flour, milk, baking powder, and vanilla and mix well.
  • Whisk egg whites in a glass or metal bowl until soft peaks form. Slowly add the remaining 1/4 cup of sugar while beating until medium peaks form. Gently fold 1/3 of the egg white mixture into the egg yolk mixture. Carefully fold in the rest of the egg whites, then transfer batter to the prepared pan.
  • Bake in the preheated oven for 45 to 50 minutes, or until a cake tester inserted into the middle comes out clean. Let the cake cool on a wire rack for 10 minutes, then loosen the edges with a knife and remove the sides. Allow the cake to cool completely on the wire rack for about 20 more minutes.
  • Flip the cake onto a deep serving plate, remove the pan bottom, and poke holes all over using a two-pronged meat fork or a cake tester.
  • Prepare the filling and topping by blending condensed milk, evaporated milk, and 1/4 cup whipping cream in a bowl. Set aside 1 cup of the mixture for later use. Gently drizzle the remaining mixture over the cake until fully soaked.
  • In a chilled glass or metal bowl, pour in the remaining whipping cream. Use an electric mixer to beat until thickened and at spreading consistency. Spread the whipped cream over the cake and top with garnished cherries.
  • Chill in the refrigerator until you're ready to enjoy.
