Triple ginger cookies with fresh, candied, and ground ginger, sweetened with brown sugar and molasses. A perfect blend of sweetness and spice!
Ingredients:
  • 2.25 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 2 teaspoons baking soda
  • 0.5 teaspoon salt
  • 1 cup packed brown sugar
  • 0.75 cup unsalted butter, softened
  • 0.25 cup molasses
  • 1 large egg
  • 0.5 cup chopped crystallized ginger
  • 1.5 tablespoons minced fresh ginger root
Instructions:
  • Combine flour, ginger, baking soda, and salt, then whisk in a bowl.
  • In a large bowl, use an electric mixer to whip together brown sugar and butter until smooth and creamy. Incorporate egg and molasses. Slowly add flour mixture using a wooden spoon. Fold in crystallized and fresh ginger. Chill covered in the refrigerator for a minimum of 2 hours, or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C. Roll the chilled dough into 1-inch balls and space them 2 inches apart on ungreased baking sheets before baking.
  • Bake until golden brown in a preheated oven for 10 minutes. Then, transfer to wire racks to cool.
