Freeze these delectable mango and passionfruit cheesecake muffins for a quick and tasty lunchbox treat.
Ingredients:
  • 300.00 gm self-raising flour
  • 2.00 gm baking powder
  • 75.90 gm vegetable oil
  • 165ml can coconut milk
  • 4 passionfruit, halved
  • 1 small mango, finely chopped
  • 100g cream cheese block, cut into 12 cubes
Instructions:
  • Preheat your oven to 200C/180C fan-forced and line a 12-hole muffin pan (1/3-cup-capacity) with paper cases.
  • In a large bowl, mix together the flour, baking powder, and sugar. Create a well in the center. In a large jug, whisk together the oil, egg, vanilla, and coconut milk. Pour the mixture into the well along with three-quarters of the passionfruit pulp and half of the mango. Gently stir until just combined, leaving some lumps for texture.
  • Spoon mixture into the prepared muffin tin, add a piece of cheese in the center of each, cover with batter, sprinkle remaining fruit, then bake for 15 to 20 minutes until firm. Let it rest for 5 minutes, then cool on a wire rack before serving.
