Tropical Island Scones

Enjoy tropical coconut and vanilla chip scones with a Bisquick® mix, drizzled with sweet glaze - a delightful addition to any bread basket!
Ingredients:
  • 3 1/4 cups Original Bisquick™ mix
  • 1/4 cup granulated sugar
  • 1/4 cup cold unsalted butter
  • 1 cup white vanilla baking chips
  • 1 cup flaked coconut
  • 1 tablespoon finely grated lime peel
  • 1/2 cup heavy whipping cream
  • 1 egg
  • 1/2 cup powdered sugar
  • 1 tablespoon fresh lime juice
Instructions:
  • Preheat the oven to 425°F and generously coat a large cookie sheet with cooking spray.
  • Combine Bisquick mix and granulated sugar in a large bowl. Add butter and blend until the mixture resembles fine crumbs using a pastry blender or 2 table knives. Gently mix in the chips, coconut, and lime peel.
  • In small bowl, vigorously whip together cream and egg. Mix into Bisquick until dough comes together. Dust work surface and hands with extra Bisquick; gently knead dough 5 times. Divide dough in half. Form each half into a 6-inch round; cut each round into 6 wedges. Arrange on a baking sheet.
  • Bake until golden brown, then mix powdered sugar and lime juice until smooth. Remove scones from sheet and drizzle with glaze. Serve warm.
