Tropical jelly slice recipe

Refreshing tropical jelly slice with pineapple and passionfruit. A must-try no-bake treat.
Ingredients:
  • 250g plain sweet biscuits
  • 150g butter, melted
  • 395g can sweetened condensed milk
  • ½ cup lemon juice, strained
  • ⁄³ cups boiling water
  • 6.00 gm gelatine powder
  • 85g packet pineapple jelly crystals
  • 3 passionfruit, halved
  • Fresh mint leaves, to serve
Instructions:
  • Prepare a slice pan by greasing it and lining the base and sides with baking paper, leaving a 5cm overhang on all sides. Pulse biscuits in a food processor until they form fine crumbs. Add butter and pulse until combined. Press the biscuit mixture into the base of the pan. Chill in the refrigerator for 30 minutes until firm.
  • Combine condensed milk and lemon juice in a bowl until well mixed. In a small jug, pour boiling water over gelatine and stir until dissolved. Mix gelatine mixture into condensed milk mixture. Pour over biscuit base and chill in the refrigerator for 1 hour or until set.
  • Next, pour the jelly crystals into a large heatproof bowl. Pour the rest of the boiling water and mix until fully dissolved. Add 200ml of cold water and mix well. Gently fold in the passionfruit pulp and let it sit for 10 to 15 minutes to cool to room temperature.
  • Drizzle jelly mixture over slice and chill for 2 hours until firm. Gently transfer slice from pan, garnish with fresh mint leaves, cut into pieces, and serve.
