Tropical Salad with Pineapple Vinaigrette

Create a simple and delicious salad by mixing salad greens with fresh pineapple, bacon bits, nuts, and toasted coconut. Feel free to swap in toasted almonds for a twist.
Ingredients:
  • 6 slices bacon
  • 0.25 cup pineapple juice
  • 3 tablespoons red wine vinegar
  • 0.25 cup olive oil
  • freshly ground black pepper to taste
  • salt to taste
  • 1 (10 ounce) package chopped romaine lettuce
  • 1 cup diced fresh pineapple
  • 0.5 cup chopped and toasted macadamia nuts
  • 3 green onions, chopped
  • 0.25 cup flaked coconut, toasted
Instructions:
  • In a large, deep skillet over medium-high heat, brown the bacon evenly for about 10 minutes. Remove, crumble, and set aside.
  • In a lidded jar or cruet, shake together pineapple juice, red wine vinegar, oil, pepper, and salt until well combined.
  • Combine lettuce, pineapple, macadamia nuts, green onions, and bacon in a large bowl. Drizzle dressing over the salad and mix well to ensure everything is evenly coated. Sprinkle with toasted coconut before serving.
