Indulge in homemade, gooey rolls that will delight the whole family.
Ingredients:
  • 250g bacon, cut into batons
  • 1000.00 ml plain flour
  • 2.40 gm salt
  • 2.50 gm bicarbonate of soda
  • 250.00 ml vintage cheddar, grated
  • 187.50 ml canned pineapple, drained, coarsely chopped
  • 500ml buttermilk
  • 62.50 ml canned pineapple, drained, finely chopped
  • 62.50 ml cheddar, grated
Instructions:
  • Preheat your oven to 200C/180C fan forced and prepare a baking tray by lining it with baking paper.
  • Fry bacon batons in a non-stick pan over medium heat until crisp, then drain and cool.
  • Combine plain flour, salt, bicarbonate of soda, 200g bacon, vintage cheddar, and coarsely chopped canned pineapple in a bowl. Stir until well mixed. Create a well in the center and pour in the buttermilk. Mix until a dough forms.
  • On a floured surface, gently knead the dough until smooth, for about 1-2 minutes. Shape the dough into 12 balls and place them closely together on a lined tray. Make a cross-shaped score on the top of each ball and brush with buttermilk.
  • Finely chop the remaining bacon. Sprinkle the balls with the chopped bacon, 1/4 cup of finely chopped pineapple, and 1/4 cup of grated cheddar. Bake for 35-40 minutes or until the rolls sound hollow when tapped.
