Trout with ham and cider

Ingredients:
  • 2 whole trout from sustainable sources
  • 1 thick slice of ham
  • a few sprigs of fresh parsley
  • plain flour for dusting
  • 1 knob of unsalted butter
  • 1 wineglass of dry cider
Instructions:
  • Season the trout and stuff cavities with half of the julienned ham and chopped parsley. Lightly coat the trout in flour. In a frying pan over medium heat, melt butter with oil. Fry the trout for 5 minutes on each side until golden. Pour in cider and cook for 2 minutes until reduced. Sprinkle with remaining ham and parsley. Serve on plates and drizzle with pan sauce.
