Truffled parsnip remoulade with cured ham

Elevate your dinner with French-inspired truffled parsnip remoulade and cured ham.
Ingredients:
  • 2 large parsnips
  • 42.00 gm lemon juice
  • 150g mayonnaise
  • 75g creme fraiche
  • 40.00 ml finely chopped flat-leaf parsley
  • Shaved black truffle or truffle oil (optional – see notes)
  • Bayonne ham or prosciutto, to serve
Instructions:
  • Slice the parsnips thinly with a mandoline, then cut them into strips and sprinkle with lemon juice.
  • Mix together the mayonnaise, creme fraiche, parsley, and optional truffle, then season to taste.
  • Combine the parsnip into the mixture with a toss.
  • Present a side of ham accompanied by a dollop of remoulade for a perfect pairing.
