Tulumba (Deep-Fried Pastry with Syrup)

Turkish tulumba: crisp pastries soaked in sweet syrup, simple to make.
Ingredients:
  • 2 cups water
  • 6 tablespoons vegetable oil
  • 3.25 cups all-purpose flour
  • 5 large eggs
  • 2 cups vegetable oil for frying
  • 5 cups white sugar
  • 2.5 cups water
Instructions:
  • In a large pot over high heat, bring 2 cups of water and 6 tablespoons of oil to a boil. Remove from heat and stir in flour and baking powder until well combined. Let it cool for 15 to 20 minutes.
  • Add the eggs one at a time, then whisk with an electric mixer until the batter is silky and uniform.
  • Prepare the syrup by combining sugar and 2 cups of water in a saucepan. Bring the mixture to a boil over medium-high heat, stirring until the sugar has dissolved. Remove from heat and let cool for at least 20 to 30 minutes.
  • Once the syrup cools, warm the oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Fill a tulumba syringe or icing bag with dough and pipe small portions into hot oil. Alternatively, drop spoonfuls of dough into the oil for a different shape. Fry in batches until golden, for 5 to 7 minutes. Place on paper towel-lined plate to cool for about 10 minutes. Transfer to a bowl and top with cooled syrup. Let it soak for at least 2 hours before enjoying.
