Tantalizing tuna and rice salad - simple and delicious.
Ingredients:
  • 400.00 gm Basmati rice, rinsed
  • 150g green beans, trimmed, chopped
  • 87.50 gm vindaloo curry paste
  • 250g cherry tomatoes, halved
  • 425g can tuna in oil, flaked, oil reserved
  • 62.50 ml chopped fresh coriander leaves
  • Plain yoghurt, to serve
  • Lime wedges, to serve
Instructions:
  • In a saucepan over high heat, combine rice and 3 cups cold water. Bring to a boil, stirring occasionally. Reduce heat to low and simmer covered for 10 minutes. Add beans and continue cooking covered for 4 more minutes until beans and rice are tender.
  • Mix in the fragrant curry paste, then incorporate the tomato, flavorful tuna, and the reserved oil. Cook the mixture while stirring for 5 to 6 minutes until the tomato begins to soften. Sprinkle in the aromatic coriander, then combine everything well. Serve alongside creamy yogurt and zesty lime wedges.
