Turkey with roast potatoes & cherry port sauce

Turkey steaks are a lean and festive option for a healthy meal.
Ingredients:
  • 600g Baby Coliban (Chat) potatoes (see note)
  • 4 (about 125g each) turkey breast steaks
  • 3cm-piece fresh ginger, peeled, cut into matchsticks
  • 60ml (1/4 cup) port
  • 80ml (1/3 cup) chicken style liquid stock (see note)
  • 40.00 ml redcurrant jelly
  • 160g (1 cup) fresh cherries or frozen cherries, pitted, halved
  • Steamed asparagus, to serve
Instructions:
  • Pierce the potatoes with a fork, then microwave on High for 5 minutes until almost tender. Allow to cool slightly before halving.
  • Preheat your oven to 200°C. Arrange potato slices in a single layer on a large baking tray. Drizzle with oil and sprinkle with pepper. Roast for 25 minutes or until golden brown.
  • Heat a large non-stick frying pan over high heat. Give it a quick spray of oil. Cook the turkey for 2-3 minutes on each side until beautifully golden and fully cooked. Transfer the turkey to a plate and cover it with foil to maintain its warmth.
  • Lower the heat and introduce the aromatic ginger and flavorful port into the pan. Let it gently simmer for a minute. Incorporate the stock and redcurrant jelly, stirring constantly until the jelly melts completely. Finally, add the cherry and let it simmer for about 3 minutes until the cherry becomes tender and the sauce achieves a thicker consistency.
  • Arrange the turkey on serving plates and generously drizzle the sauce over it. Enjoy with a side of potato and asparagus.
