Succulent beef and turnips simmered in zesty tomato broth, served atop fluffy rice for a mouthwatering Arabic turnip stew.
Ingredients:
  • 6 cups water, or as needed
  • 1 pound beef stew meat, cut into 1-inch cubes
  • 0.5 (6 ounce) can tomato paste, or more as needed
  • 4 cups water
  • 5 turnips, peeled and cut into 2-inch cubes
  • 2 tablespoons lemon juice
  • 1.5 tablespoons maple syrup
  • 1 tablespoon white sugar
  • 2 cups cooked rice
Instructions:
  • In a large pot, heat 6 cups of water until boiling. Add stew meat and cook until done and water has fully reduced, 30 to 45 minutes, removing any excess fat from the surface as necessary.
  • Coat the cooked stew meat with tomato paste for 1 to 2 minutes. Pour in 4 cups of water, add turnips, salt, and black pepper, and bring to a boil. Stir in lemon juice, maple syrup, and sugar, then reduce the heat to medium and simmer for 30 to 40 minutes until it thickens. Serve over cooked rice.
