Boost your veggie intake with our hearty Tuscan vegetable and bean soup, packed with 2.5 servings of veggies per bowl.
Ingredients:
  • 1 medium brown onion, finely chopped
  • 400g packet fresh vegetable mix (see note)
  • 1020.00 gm chicken style liquid stock
  • 400g can diced tomatoes
  • 400g can cannellini beans, drained, rinsed
Instructions:
  • In a large, deep saucepan over medium-high heat, heat oil until shimmering. Add onion and sauté for 3 to 4 minutes until softened. Stir in vegetable mix and cook for an additional 5 minutes until just beginning to soften.
  • Combine the stock, tomato, and beans in a pot. Season generously with salt and pepper. Cover the pot and bring to a boil. Reduce heat to medium and simmer for 5 to 6 minutes until the vegetables are tender.
