Savory black-eyed pea porridge, a delightful dinner treat.
Ingredients:
  • 2 cups dried black-eyed peas
  • 1 tablespoon vegetable oil
  • 0.5 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup all-purpose flour
  • 5 cups water
  • 2 teaspoons ground nutmeg
  • 2 tablespoons white sugar
Instructions:
  • Place the black-eyed peas in a bowl and cover them with water, allowing them to soak overnight.
  • In a large saucepan over medium heat, warm vegetable oil. Add garlic and onion, cook until softened, about 4 minutes. Stir in flour until combined. Pour in water, nutmeg, and sugar. Add drained peas. Boil on high, then simmer on medium-low for 30 minutes until black-eyed peas are tender.
