Savory black-eyed pea porridge, a delightful dinner treat.
Ingredients:
2cups dried black-eyed peas
1tablespoonvegetable oil
0.5onion, finely chopped
3clovesgarlic, minced
1cupall-purpose flour
5cups water
2teaspoons ground nutmeg
2tablespoons white sugar
Instructions:
Place the black-eyed peas in a bowl and cover them with water, allowing them to soak overnight.
In a large saucepan over medium heat, warm vegetable oil. Add garlic and onion, cook until softened, about 4 minutes. Stir in flour until combined. Pour in water, nutmeg, and sugar. Add drained peas. Boil on high, then simmer on medium-low for 30 minutes until black-eyed peas are tender.
