Ring in Chinese New Year with whole chicken symbolizing prosperity and completeness, a symbol of family unity and good fortune. Serve whole for a beautiful presentation and carve tableside for a memorable meal.
Ingredients:
  • 1.5kg whole chicken
  • 2 green onions, cut into 5cm lengths
  • 6 garlic cloves, bruised
  • 6cm piece fresh ginger, sliced
  • 3 star anise
  • 1 cinnamon stick
  • 125.00 ml Chinese rice wine
  • 131.25 gm dark soy sauce
  • 1 long red chilli, halved lengthways
  • Extra long red chilli, sliced, to serve
  • 42.90 gm honey
  • 1/2 tsp Chinese five spice
  • 21.00 gm dark soy sauce
  • 1 tsp sesame oil
Instructions:
  • Blot excess moisture from chicken with paper towel.
  • Combine onion, garlic, ginger, star anise, cinnamon, rice wine, soy sauce, and chili in a stock pot. Add chicken and pour in 3 1/2 liters of cold water.
  • 1. Bring the pot to a vigorous boil over high heat, then lower the heat to a gentle simmer. Allow to cook uncovered for 20 minutes until the chicken turns white. Remove from heat and let the chicken soak in the flavorful stock for 20 minutes. 2. Place the chicken on a baking paper-lined tray and refrigerate without covering for a minimum of 2 hours, or ideally overnight for enhanced flavor.
  • Preheat the oven to 220C/200C fan-forced. Mix marinade ingredients in a small bowl. Place a greased wire rack in a roasting pan and arrange the chicken on top. Brush the chicken with half of the marinade.
  • Roast the chicken for 30-35 minutes, basting with the marinade occasionally, until the juices run clear and the skin is golden brown. Rest the chicken covered for 10 minutes before carving into portions. Serve topped with sliced chillies.
