Twice-Microwaved Potatoes

Quick and delicious microwave version of twice-baked potatoes, no oven required!
Ingredients:
  • 6 medium russet potatoes
  • 1 cup sour cream
  • 0.5 cup cubed processed cheese
  • 0.5 cup shredded Cheddar cheese, divided
  • 4 green onions, chopped
  • 0.25 teaspoon garlic powder, or to taste
  • 0.125 teaspoon seasoned salt, or to taste
  • ground black pepper to taste
  • 1 tablespoon chopped green onion
Instructions:
  • Use a fork to prick holes all over the potatoes.
  • Microwave potatoes on high in batches if needed, turning halfway through for even cooking, for about 4 minutes per potato. Potatoes are ready when easily pierced with a fork.
  • Take the potatoes out of the microwave and cut them in half lengthwise. Use a large spoon to scoop out the flesh, making sure to keep the skins intact.
  • In a large microwave-safe bowl, combine flesh, sour cream, processed cheese, 1/2 cup Cheddar cheese, green onions, garlic powder, seasoned salt, and pepper. Microwave on high for 2 to 3 minutes, or until heated through.
  • Fill the potato skins with the hot potato mixture. Top with the remaining 1/2 cup of Cheddar and 1 tablespoon of green onion for a delicious finish.
