Mouthwatering Greek tyropita: flaky layers of phyllo dough with creamy feta and egg filling.
Ingredients:
  • 14 ounces feta cheese, crumbled
  • 10 sheets phyllo dough, thawed if frozen
  • 0.5 cup olive oil
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease two 9-inch round cake pans.
  • Combine the feta cheese and eggs in a bowl to create the delicious filling.
  • Place one sheet of phyllo on a work surface and generously brush with olive oil. Add another sheet and brush with oil. Continue layering for a total of four sheets, leaving the top sheet unbrushed. Carefully transfer the oiled stack to a cake pan, allowing some natural folds and wrinkles for texture.
  • Spread half of the filling evenly over the phyllo. Fold overhanging phyllo on top of the filling, allowing natural folds. Place one sheet of phyllo on top, brush with oil, then use the brush to pat down the sides of the pan.
  • Continue layering phyllo sheets with oil and filling to assemble the second pie.
  • Place both pies in the preheated oven and bake until the tops are a deep golden brown, about 45 to 55 minutes. Allow them to cool slightly before slicing. Serve the pies warm or at room temperature.
