Ube Panna Cotta

Indulge in a stunning panna cotta featuring ube, a vibrant purple yam commonly used in Filipino sweets.
Ingredients:
  • 1 ube (purple yam), peeled
  • 1.5 cups whole milk, divided
  • 1 cup coconut milk
  • 1 (.25 ounce) package unflavored gelatin
Instructions:
  • Set up a steamer in a saucepan and fill with water just below the steamer. Bring to a boil. Steam the ube until tender for about 20 minutes. Let it cool for 10 minutes. Blend or mash the ube.
  • In a blender or food processor, blend 1 cup of puréed ube with 3/4 cup of whole milk, coconut milk, and sugar until smooth.
  • In a saucepan, gently pour in the rest of the 3/4 cup whole milk. Sprinkle gelatin over the milk and allow it to rest for 5 minutes.
  • In a saucepan, gently warm the milk and gelatin, stirring until the gelatin dissolves, for about 3 to 5 minutes. Add the ube mixture and raise the heat to medium, cooking until steam begins to rise, stirring occasionally, for another 3 to 5 minutes.
  • Pour the mixture into elegant serving glasses or molds. Place in the refrigerator to set for 3 hours until perfectly chilled.
