Grandma's apple red cabbage: A versatile and delicious dish that can be enjoyed hot or cold, on its own or with potatoes.
Ingredients:
4tablespoons butter
0.5 cupthick-cut bacon, diced
0.5 cupdicedonion
2cups chicken broth
0.5 cupred wine, or to taste
1 large apple, peeled and sliced
2tablespoons apple cider vinegar, or to taste
2teaspoons white sugar, or to taste
4whole cloves
3bay leaves
0.25 teaspoonground nutmeg, or to taste
1pinchground cinnamon, or to taste
salt and ground pepper to taste
2.25 pounds shreddedred cabbage
Instructions:
In a stockpot over medium-high heat, melt butter. Add bacon and cook until starting to crisp, for 4 to 6 minutes. Stir in onions and cook until lightly browned and translucent, about 6 to 8 minutes.
Combine chicken broth, red wine, apple slices, and apple cider vinegar in a pot and bring to a boil. Add sugar, cloves, bay leaves, nutmeg, cinnamon, salt, and black pepper. Gently mix in red cabbage, cover, and simmer on low heat for 30 to 45 minutes until the cabbage is tender.
