Ultimate chicken noodle soup

Whip up a comforting classic to beat the winter blues.
Ingredients:
  • 2 carrots, peeled, finely chopped
  • 2 celery sticks, finely chopped
  • 1 leek, finely chopped
  • 2L chicken broth, chicken meat reserved (see notes)
  • 120g Dried Vermicelli Egg Noodle
  • 82.50 ml chopped fresh continental parsley
  • 42.00 gm lemon juice
Instructions:
  • In a large stockpot over medium heat, warm the oil. Add the carrot, celery, and leek, stirring occasionally until soft, about 5 minutes.
  • Pour in the rich and flavorful chicken broth, then crank up the heat until it boils.
  • Once the vermicelli is added, lower the heat to medium and let it simmer for 8-10 minutes until it is al dente. Stir in the parsley, lemon juice, and the reserved chicken meat, then season to taste.
