Boost winter health with our immune-boosting chicken soup featuring ginger, garlic, and turmeric for a delicious defense against the cold.
Ingredients:
  • 1 leek, sliced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 stalk lemongrass, trimmed, bruised and halved
  • 5 stalks fresh flat-leaf parsley, plus extra leaves to serve
  • 4cm piece fresh ginger, peeled
  • 2 small red chillies, trimmed, split
  • 1/4 tsp ground turmeric
  • 2 litres chicken style liquid stock
  • 2 chicken breast fillets, thinly sliced
  • 150g dried linguine pasta, halved
  • 40.00 ml chopped fresh flat-leaf parsley
  • Finely chopped red chilli, to serve
  • Lemon zest, to serve
Instructions:
  • In a large saucepan over medium heat, warm oil. Add leek, carrot, and celery; sauté for 5 minutes until leek begins to soften. Stir in lemongrass, parsley stalks, ginger, chili, garlic, and turmeric; cook for 2 to 3 minutes until fragrant.
  • Turn up the heat to high and pour in the stock. Once it comes to a boil, lower the heat to low and let it simmer covered for 30 minutes, or until the veggies are tender. Finally, fish out and throw away the lemongrass, parsley stalks, and ginger.
  • - Introduce the chicken, then gently simmer with the lid on for 10 minutes. - Introduce the pasta, generously season with salt and pepper, and simmer without the lid for 8 to 10 minutes until the pasta is perfectly tender and the chicken is fully cooked. - Finish by stirring in the fresh, chopped parsley.
  • Ladle the soup into individual bowls and garnish with chili, lemon zest, and fresh parsley before serving.
