Tropical ulu pancakes - a fluffy breakfast delight for the whole family!
Ingredients:
  • 1 small ripe ulu, cut in half
  • 0.33333334326744 cup milk
  • 1 teaspoon baking powder
  • 0.25 teaspoon ground nutmeg
  • 1 teaspoon coconut oil, or to taste
Instructions:
  • Transfer the ulu flesh to a blender, then combine with eggs, milk, baking powder, cinnamon, nutmeg, and vanilla extract. Blend until the batter is smooth.
  • Start by warming up the coconut oil on a griddle set to medium heat. Pour approximately 1/4 cup of batter onto the griddle. Lower the heat to low, cover, and cook until the edges are set, which should take about 3 minutes. Flip the pancake over and cook until it turns a golden brown, around 2 more minutes. Repeat this process with the rest of the batter.
