Crispy roasted okra and tomatoes with a crunchy panko topping for a healthier alternative to fried okra.
Ingredients:
  • 0.5 pound fresh okra, cut into 1/2 inch slices
  • 8 cherry tomatoes, halved
  • 2 tablespoons olive oil, or as needed
  • 0.5 teaspoon garlic powder, or to taste
  • kosher salt and ground black pepper to taste
  • 0.5 cup panko bread crumbs
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) and lightly grease a baking sheet.
  • In a large bowl, toss together okra and tomatoes with olive oil, garlic powder, salt, and pepper until evenly coated. Add panko bread crumbs and mix well. Transfer the mixture to the baking sheet.
  • Roast in the oven until the tomatoes are tender and the okra is golden brown, for about 13 to 15 minutes.
