Uncle D's Sweet Piccalilli (Green Tomato Relish)

Tangy green tomato piccalilli with apples and peppers, perfect for pork or sausage.
Ingredients:
  • 8 4-ounce canning jars with lids and rings
  • 3 cups apple cider vinegar
  • 3 cups white sugar
  • 2 tablespoons salt
  • 1 tablespoon mustard seed
  • 1 tablespoon dried basil
  • 6 cups seeded and finely chopped green tomatoes
  • 2 cups finely chopped red bell peppers
  • 2 cups finely chopped red onion
  • 2 cups finely chopped Granny Smith apples
Instructions:
  • Submerge the canning jars in gently simmering water for a minimum of 5 minutes. Cleanse the new, unused lids and rings in warm soapy water.
  • In a large pot, let vinegar, sugar, salt, mustard seed, and basil come together and reach a boil. Simmer gently until sugar dissolves, approximately 5 minutes. Add green tomatoes, bell peppers, onion, and apples to the pot; cook over high heat, with occasional stirring, until vegetables soften and flavors blend beautifully, which will take about 15 to 20 minutes.
  • Fill the hot, sterilized jars with relish, leaving 1/4 inch of space at the top. Gently release any air bubbles by running a knife or thin spatula along the inside of the jars. Clean the rims of the jars with a damp paper towel to ensure they are free of residue. Seal with lids and screw on rings tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil. Lower the jars into the boiling water using a holder, leaving a 2-inch space between them. Add more boiling water if needed to ensure the water level is at least 1 inch above the jar tops. Cover and process for about 10 minutes in a rolling boil.
  • Place the jars on a cloth-covered or wood surface, spaced out, until they cool. Press the top of each lid to ensure it is sealed tightly, then store the jars in a cool, dark area.
