Succulent pulled chicken and fresh veggies wrapped in crispy lumpia - a unique twist on a classic appetizer.
Ingredients:
  • 1 whole chicken
  • 2 carrots, peeled and cut into 1-inch pieces
  • 2 stalks celery, cut into 1-inch pieces
  • 1 medium yellow onion, cut into 1-inch pieces
  • Salt and pepper
  • 2 (16 ounce) packages frozen French-cut green beans
  • 1 pound bean sprouts
  • 2 (16 ounce) packages lumpia wrappers
  • 1 egg, beaten
  • vegetable oil for frying
  • 0.75 cup soy sauce
  • 0.5 cup unseasoned rice vinegar
  • 3 cloves garlic, minced
Instructions:
  • Place the chicken in a cozy stockpot, submerge it in water, and toss in the carrots, celery, and onion. Let it reach a gentle boil, then lower the heat to a simmer. Simmer for approximately 1 hour and 15 minutes, or until the chicken is tender and easily separates from the bone.
  • 1. Take out the chicken from the pot and let it cool. Once cool, shred the meat and return bones and skin to the pot. Bring to a boil and simmer until liquid reduces by half, about 10-15 minutes.
  • Remove the bones and vegetables, then return the flavorful liquid to the pot and season with salt and pepper to taste.
  • Simmer beans and bean sprouts in stock until beans are tender, about 8 minutes. Mix in pulled chicken meat. Strain chicken and vegetable filling until dry. Cool completely for at least 15 minutes before assembling lumpia.
  • Lay a wrapper on a flat surface and spoon 1/4 cup of chicken filling onto the lower quarter of the wrapper. Fold the wrapper over the filling, roll once, then fold in the ends. Roll up until almost at the top, brush the edge with egg, fold over, and seal. Repeat with remaining filling to make all the lumpia.
  • Heat a generous amount of vegetable or canola oil in a medium, deep-sided saucepan until it reaches 350 degrees F. Fry the lumpia in batches until golden brown, then drain on paper towels to remove excess oil.
  • Combine the soy sauce, vinegar, and garlic for a flavorful dipping sauce. Enjoy with the lumpia.
