Try this deconstructed cabbage soup for a cozy twist on the classic stuffed cabbage flavors.
Ingredients:
  • 0.5 cup diced green bell pepper
  • 1 pound lean ground beef
  • 3 smoked sausage links, sliced
  • 1 medium onion, diced
  • 0.5 cup diced red bell pepper
  • 2 large cloves garlic, minced
  • 6 cups beef broth
  • 1 (16 ounce) can Italian-style diced tomatoes
  • 1 head cabbage, cored and cut into wedges
  • 3 carrots, peeled and diced
  • 1 (15 ounce) can Italian-style tomato sauce
  • 0.33333334326744 cup brown sugar
  • 0.33333334326744 cup apple cider vinegar
  • 1 teaspoon dried tarragon
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon red pepper flakes, or to taste
Instructions:
  • Preheat a Dutch oven or stockpot over medium-high heat. Brown the beef and sausage in the pot, stirring occasionally, for 5 to 7 minutes. Drain the excess grease, leaving 2 tablespoons in the pot.
  • In the same pot with the meat drippings, saute the onion and bell peppers over medium-high heat for 3 to 4 minutes. Add garlic and cook until all veggies are slightly softened and fragrant, taking care not to burn them, for about 1 minute. Then, stir in beef broth, diced tomatoes, cabbage, and carrots.
  • In a separate bowl, mix together tomato sauce, brown sugar, vinegar, tarragon, and Worcestershire until the sugar is dissolved. Add the mixture to the pot along with red pepper flakes, then season with salt and pepper.
  • Bring the mixture to a lively boil, then lower the heat and simmer untill the cabbage is tender and the flavors are well-blended, approximately 45 minutes. Taste, season if necessary, and enjoy your meal!
