Delicious gingerbread cake with caramelized pears - perfect for the colder seasons!
Ingredients:
  • 2.5 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cloves
  • 0.25 cup butter
  • 0.25 cup brown sugar
  • 1 (29 ounce) can pear halves, well drained
  • 0.5 cup white sugar
  • 0.5 cup butter, softened
  • 1 cup molasses
  • 1 cup hot water
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C. Combine flour, baking soda, cinnamon, ginger, cloves, and salt in a bowl and mix lightly until well combined.
  • In a 10-inch springform pan, melt 1/4 cup of butter in the oven for a minute or two. Evenly sprinkle brown sugar over the melted butter. Pat dry pear halves with paper towels, and slice each half into 3 lengthwise slices. Arrange pear slices in a spiral pattern on top of the brown sugar. Coat inside walls of the pan with cooking spray without disturbing the arranged slices.
  • Using an electric mixer, beat white sugar and 1/2 cup of butter in a mixing bowl until creamy. Add the egg, followed by the molasses. Combine the flour mixture with the molasses mixture, then gently mix in the hot water. Pour the batter over the pear slices in the springform pan.
  • Bake the cake in the preheated oven for 45 to 50 minutes, or until a knife inserted comes out clean.
  • Cool completely in the pan until it reaches room temperature before flipping onto a serving dish and removing the pan.
