Upside-down pineapple coconut cake

Coconut and star anise cake: A tropical getaway in every bite.
Ingredients:
  • 1/2 small pineapple (base half only)
  • Melted butter, to grease
  • 100g (1/2 cup) caster sugar
  • 5 whole star anise
  • 40g butter, coarsely chopped
  • 100g butter, extra, at room temperature
  • 100g (1/2 cup) caster sugar, extra
  • 125g self-raising flour, sifted
  • 125ml (1/2 cup) Ayam's light coconut milk
  • 65g (3/4 cup) desiccated coconut
  • Vanilla ice-cream, to serve (optional)
Instructions:
  • Trim the base of the pineapple half to make it stable on the work surface. Cut along the skin, preserving the flesh. To remove the "eyes," cut 1cm-deep wedges around the flesh while following the diagonal line of the eyes.
  • 1. Coat a 22cm round cake pan with melted butter and line the base with non-stick baking paper. 2. Slice the pineapple into 5 thin slices. 3. Cut each slice in half and arrange around the edge of the pan, overlapping slightly. 4. Use remaining slices to fill any gaps in the center.
  • Preheat the oven to 180°C. Heat sugar and star anise in a saucepan over medium heat, stirring occasionally with a wooden spoon until the sugar melts and turns golden. Remove from heat, stir in the butter, and pour the caramel over the pineapple to coat evenly. Place star anise around the pineapple before the caramel sets.
  • In a large bowl, use an electric beater to cream the extra butter and sugar until pale and creamy. Gradually add the eggs one at a time, beating well after each addition. Fold in a spoonful of flour until just combined. Stir in coconut milk, coconut, and remaining flour until fully combined.
  • Transfer the mixture into the pan, ensuring the surface is smoothed. Bake in the oven for 25-30 minutes until golden and a skewer inserted in the center comes out clean. Let it cool in the pan for 5 minutes before flipping it onto a serving plate. Arrange any fallen star anise or pineapple over the top. Serve sliced with ice-cream on the side, if desired.
