Crispy mashed potatoes cooked in butter and olive oil.
Ingredients:
  • 6 red potatoes, halved
  • 1 pinch garlic powder, or to taste
  • salt to taste
  • 0.25 cup butter
  • 2 tablespoons olive oil, or as needed
Instructions:
  • In a large pot, add potatoes and cover with salted water. Season water with garlic powder and bring to a boil. Reduce heat to medium-low and simmer until potatoes are tender, about 15 to 20 minutes. Drain potatoes and transfer to a large skillet over medium-high heat.
  • In the hot skillet, combine mashed potatoes with butter and garlic powder. Shape into a large patty, brush edges with olive oil, and cook until golden brown (5-10 minutes). Break patty with a wooden spoon, folding the crispy bottom into the potatoes. Repeat this process until desired texture is achieved.
