Delicious ham and veggie-filled savory pockets - perfect appetizers!
Ingredients:
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 small tomatoes - peeled, seeded and chopped
  • 4 ounces diced cooked ham
  • 2 hard-cooked eggs, chopped
  • 1.5 tablespoons chopped fresh parsley
  • salt and pepper to taste
  • 1 (10 ounce) can refrigerated pizza crust dough
Instructions:
  • In a large skillet over medium-high heat, saute onions in hot oil until tender. Add tomatoes and cook for a minute, then stir in ham and heat through. Remove from heat, mix in eggs and parsley, and allow to cool for at least 5 minutes before serving.
  • Preheat your oven to 425 degrees F (220 degrees C). Roll out the pizza dough into a 14x10 inch rectangle on a clean surface, then cut it into twelve 3-inch squares.
  • Evenly distribute the filling onto the squares' centers. Lightly brush the edges with water. Fold each square in half to create a triangle and press the edges to seal. Transfer to a greased cookie sheet and use a fork to prick it.
  • Place the dish in the preheated oven and bake until it turns a beautiful golden brown, which should take about 8 to 10 minutes. Allow it to rest for 5 minutes before serving.
