Valerie's Bolognese Sauce

Slow-simmered savory meat sauce perfect for pasta or versatile cooking.
Ingredients:
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 stalk celery, finely chopped
  • 0.5 pound ground beef
  • 0.5 cup red wine
  • 0.5 cup milk
  • 1 pinch ground nutmeg
  • 1 (28 ounce) can crushed tomatoes
  • 1 tablespoon white sugar
  • 1 teaspoon dried oregano
  • salt and pepper to taste
Instructions:
  • In a large saucepan, sauté onion, carrot, celery, and garlic in olive oil over medium-low heat until soft and slightly browned, around 8 minutes. Add ground beef and cook until well browned, breaking it apart as it cooks, about 10 minutes. Pour in red wine and simmer until almost absorbed, 10-15 minutes. Stir in milk and nutmeg, and cook until almost absorbed, about 10 minutes.
  • Combine crushed tomatoes, sugar, and oregano in a pot and bring to a gentle simmer over low heat. Cook uncovered for 1 hour, stirring occasionally. Season with salt and pepper to your taste.
