Vancouver Island inspired cookie with oats, coconut, and cozy spices. Chewy perfection.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 1.5 tablespoons ground cinnamon
  • 1 tablespoon ground nutmeg
  • 1 tablespoon ground allspice
  • 2 pinches salt
  • 1 cup margarine, softened
  • 1 cup white sugar
  • 0.5 cup brown sugar
  • 1 egg
  • 3 tablespoons molasses
  • 1 tablespoon vanilla extract
  • 1.5 cups quick cooking oats
  • 1 cup sweetened flaked coconut
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and get those baking sheets all greased up.
  • Combine flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt in a mixing bowl, whisk until well blended.
  • In a large bowl, use an electric mixer to blend margarine, white sugar, and brown sugar until smooth. Add egg, molasses, and vanilla, and blend until mixed. Add flour mixture and stir until dough forms; gently fold in oats and coconut until just combined.
  • Shape the dough into 1 1/4-inch balls and arrange them 2 inches apart on the baking sheets.
  • Bake until edges are lightly browned, around 12 minutes in the preheated oven. Let it cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
