Vancouver Island inspired cookie with oats, coconut, and cozy spices. Chewy perfection.
Ingredients:
1.5 cups all-purpose flour
1tablespoonbaking powder
1tablespoonbaking soda
1.5 tablespoons ground cinnamon
1tablespoonground nutmeg
1tablespoonground allspice
2pinchessalt
1cupmargarine, softened
1cupwhite sugar
0.5 cupbrown sugar
1egg
3tablespoons molasses
1tablespoonvanilla extract
1.5 cups quick cooking oats
1cupsweetened flaked coconut
Instructions:
Preheat your oven to a toasty 350 degrees F (175 degrees C) and get those baking sheets all greased up.
Combine flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt in a mixing bowl, whisk until well blended.
In a large bowl, use an electric mixer to blend margarine, white sugar, and brown sugar until smooth. Add egg, molasses, and vanilla, and blend until mixed. Add flour mixture and stir until dough forms; gently fold in oats and coconut until just combined.
Shape the dough into 1 1/4-inch balls and arrange them 2 inches apart on the baking sheets.
Bake until edges are lightly browned, around 12 minutes in the preheated oven. Let it cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
