Soy milk horchata with cinnamon and sugar - a rich and dairy-free Latin treat.
Ingredients:
  • 2.6666667461395 cups uncooked white rice
  • 10 cups water, divided
  • 1 cup soy milk
  • 1 tablespoon vanilla extract
  • 1 cup white sugar
Instructions:
  • Add half of the rice along with 2 cups of water to a blender and pulse until the rice is coarsely ground.
  • Add an additional 3 cups of water to the blender along with 2 whole cinnamon sticks. Blend until the cinnamon sticks are crushed into smaller pieces.
  • Transfer the rice mixture into a spacious pitcher.
  • Continue blending the rice, water, and cinnamon sticks until thoroughly mixed, then transfer the mixture to a pitcher.
  • Chill pitcher in the refrigerator for at least 4 hours or overnight.
  • Pour the rice mixture through a sieve into a separate pitcher or bowl, allowing the liquid to strain through while leaving the rice and cinnamon behind.
  • Combine the silky soy milk, sweet sugar, and aromatic vanilla extract with the strained liquid; refrigerate until serving time.
