Serbian vanilla sandwich cookies with shortbread texture, jam filling, and sugary finish.
Ingredients:
  • 1.5 cups vegetable shortening (such as Butter Flavor Crisco®)
  • 1 cup white sugar, divided, or as needed
  • 1 large egg
  • 2 cups all-purpose flour, plus more as needed
  • 0.25 cup apricot jam, or as needed
Instructions:
  • In a bowl, mix shortening and 1/2 cup sugar until crumbly using a pastry knife. Add egg and vanilla, then beat with an electric mixer until well combined. Using your hands, work in 2 cups flour until the mixture resembles stiff pie dough.
  • Preheat the oven to a toasty 300 degrees F (150 degrees C) and prepare 2 baking sheets with parchment paper or Silpat® mats.
  • Sprinkle flour generously on a clean surface. Place the dough on top and roll it out to 1/8 inch thickness using a floured rolling pin. Cut out rounds using a 1 3/4-inch cookie cutter or the edge of a glass. For every 2 cookies, use a smaller cutter to make cut-outs that will go on top of the filled cookies.
  • Roll out the dough again and cut out more cookies until it's all used. Aim for an equal amount of whole and cut-out cookies. Place them on the baking sheets.
  • Bake in a preheated oven for 10 minutes, ensuring the cookies do not brown. Remove from oven and let cool on the baking sheet briefly before transferring to wire racks. The cookies will be delicate while hot, so handle with care. Allow to cool completely.
  • Pour the remaining 1/2 cup of sugar into a bowl. Spread 1/4 to 1/2 teaspoon of apricot jam on each whole cookie, then sandwich with a cut-out cookie. Coat the filled cookies in sugar thoroughly on both sides.
