Vanilla blueberry

Ingredients:
  • 1 vanilla bean
  • 150g fresh blueberries
  • Vanilla ice cream, to serve
Instructions:
  • Halve the vanilla bean lengthwise and scrape out the seeds using the back of a knife. Put the vanilla seeds, vanilla bean, sugar, blueberries, and 2 tablespoons of water into a small saucepan.
  • Heat mixture over medium heat until sugar dissolves, then bring to a boil. Simmer for 5 minutes. Remove from heat and allow to cool slightly.
  • After removing the vanilla bean, blend the blueberry mixture in a food processor until smooth. Strain the mixture over a bowl to remove pulp, then transfer the sauce to a sealed bottle and refrigerate until cold. Serve generously over your favorite ice cream.
